You will need: for meringue – 250 g sugar, 2 tbsp. l. corn starch, 6 egg whites, 1 tsp. l. vanillin, 0.5 tsp. l. citric acid, 1 tsp. l. wine vinegar, a pinch of salt; for cream – 1 cup of cream (fat content at least 33%), 2 tbsp. l. sugar, 1 tsp. l. vanilla; for decoration: fresh or candied fruits and berries, nuts.
Preparation. Place the whites in a deep bowl and beat with a mixer into a foam. Add salt and citric acid and continue whisking. Add the mixture of sugar, vanilla and starch one spoonful at a time and beat the mass until stable peaks. Add vinegar to the protein mass and mix gently with a spatula. On a sheet of parchment draw a circle with a diameter of about 20 cm, put it on a baking sheet and put the protein mass on the parchment without going beyond the drawn circle.
Make a hollow in the center of the mass and bake in a preheated 150°C oven for 50 minutes. Then open the door and cool the meringue for at least 2 hours. Do not be afraid that it will crack – it is normal! For the cream, whip the cream, sugar and vanilla into a dense mass. Put the cooled meringue on a serving dish, put the cream on top and decorate the cake to your taste – berries, fruit slices, nuts.

Butter cake Pannetone (Italy)

Italians prepare cupcakes with different kinds of fillings (chocolate, nuts, candied fruits) for big holidays.
You will need: 360 g of flour, 1 tbsp of dry yeast, 60 g of butter, 65 g of sugar, 2 eggs, 80 ml of cold water, 60 ml of warm water, 1 tsp of vanilla, a pinch of salt, 150 g of candied orange, 100 g of chocolate.
Preparation. First, prepare the sourdough starter. To do this, mix 90 g of flour, a pinch of yeast and 80 ml of cold water. Cover the bowl with a towel and leave overnight. Then add the rest of the flour, sugar, oil, warm water, eggs, yeast, salt and vanilla to the starter. Knead the dough, cover with a towel and leave in a warm place for 1-1.5 hours. Gently knead the dough, add candied fruit and grated chocolate and knead the mass again a little.
Roll the dough into a ball, put in a mold, cover with a towel and leave to rise for 1-1.5 hours. Bake the cake in the oven preheated to 200 degrees for 10 minutes, then reduce the temperature to 190 ° C and bake for another 10 minutes, again reduce the temperature to 175 ° C and bake for another 25 minutes. Honey biscuits Melomakarona (Greece)

Spicy shortbread cookies with honey impregnation – this dessert is worth making at least once!
You will need:for the dough – 550 g of flour, 2 tsp of baking powder, 1 tbsp of sugar, a pinch of salt, 2 oranges, 200 ml of vegetable oil, 1 sachet of vanilla, 2 tsp of ground cinnamon, 0.5 tsp of ground cloves, 100 g of walnuts; for the syrup – 175 ml of liquid honey, 340 g of sugar, 0.5 l of water, 1 cinnamon stick.
Preparation. For the syrup, mix water, sugar, honey and cinnamon and, stirring, bring to a boil. Then reduce the heat to low and cook for 10 minutes, skimming off the foam. For the dough, mix flour, baking powder, sugar, salt, vanilla, cinnamon and cloves. Wash the oranges well, grate the zest from them and squeeze the juice (200 ml), add everything to the flour mixture with vegetable oil.
Mix and knead a smooth dough. Roll it out 1 cm thick and use a round mold or glass to squeeze out the cookies. Put it on a baking sheet covered with parchment and bake in an oven preheated to 180°C for 20-30 minutes. Dip each cookie completely in syrup for 5 minutes, then put on a wire rack to drain excess liquid and sprinkle with chopped nuts.

Famous Stollen cake (Germany)

Stollen should be prepared no later than 3-4 weeks before the holiday, so that it is well saturated with the aromas of the filling.
You’ll need it: 0.5 kg of flour, 100 g of cottage cheese, 375 g of butter, 100 g of sugar, a pinch of salt, 40 g of fresh yeast, 120 ml of milk, 80 ml of rum, 150 g of dried fruit (dried apricots, prunes), 100 g of raisins, 50 g of walnuts, 50 g of hazelnuts, 1 cup of liquid honey, 1 sachet of vanilla, 1 lemon, 200 g of powdered sugar.
Preparation. Grind dried fruits, add raisins, chopped nuts and rum, mix, place in a jar with a lid and leave for at least 4 hours or overnight. Heat the milk a little, add honey, yeast and mix well to dissolve the yeast, leave the mixture in a warm place for 20 minutes. Sift flour into a deep bowl, add cottage cheese, butter (125 g), sugar, vanilla, grated lemon zest, salt and prepared dough. Knead well, cover with a towel and leave in a warm place for 1 hour.
Then add the mixture of dried fruits and nuts to the dough and mix them well into the dough. Roll it into a rectangle, form a stollen, bend one edge of the dough, put it on a baking sheet covered with parchment and leave for 20 minutes. Bake the stollen at 175°C for about 50-60 minutes. If the cake browns prematurely, cover it with foil. Melt the remaining butter (250 g) and soak the hot cake with it: pour a little butter, then sprinkle with powdered sugar, repeat the procedure until the butter runs out. Wrap the soaked stollen in foil and store in a dry place.
Cottage cheese biscuits with jam (Poland)

To make Polish Christmas “kolachki” use several types of thick jam.
You will need: 220 g of cheese, 220 g of butter, 300 g of flour, 1 sachet of vanilla, 0.5 tsp of salt, 350 g of jam, powdered sugar for sprinkling.
Preparation. Rub the butter with flour, add cottage cheese, salt and vanilla, knead the dough. Roll it into a ball, wrap in cling film and place in the refrigerator overnight. Then roll out the dough thinly and cut into squares (4-5 cm). Put 1 tsp of jam in the center of each square, fold opposite corners to the center and pinch well. Put the cookies on a baking sheet and bake in a preheated 200°C oven for 10-12 minutes. Sprinkle the cooled cookies with powdered sugar.

Preparation. To prepare the dough, divide the eggs into whites and yolks. Whisk the whites into a strong foam, continue whisking, gradually add 75 g of sugar and continue whisking until thick foam. Beat the yolks with the remaining sugar until white. Add a third of the proteins, mix lightly and sift flour and starch into the mixture. Stir and add the remaining whites, mix gently again. Put the dough on a baking sheet covered with parchment (having previously greased the paper with butter) in the shape of a rectangle, flatten and bake in a preheated oven at 170°C for 15 minutes.
For the filling, mix the egg yolks with sugar, beat until white. Melt the chocolate in a water bath, add brewed coffee and cook until thick. Then cool the chocolate mass a little and add the beaten egg yolks, butter and cognac, beat with a mixer until smooth. Carefully place the baked sponge cake on a towel, remove the paper, roll it into a roll and cool.
For the cream, mix brewed coffee with instant coffee and cognac. Separately, beat the egg yolks with sugar until white and mix with coffee. Add the softened butter and whisk until smooth.
To assemble the cake, unwrap the cooled sponge cake, spread it evenly with chocolate filling and roll it up again, brush with coffee cream and place in the fridge for 1 hour. Decorate the cake to your taste before serving.

You will need: 0.5 l of milk, 130 g of sugar, 120 g of butter, 2 sachets of dry yeast, 720 g of flour, 2 eggs, 0.5 tbsp of salt, 2 tsp of ground cardamom.
Preparation. In a saucepan, mix milk (leave 1 tbsp) and sugar (leave 1 tbsp), stirring, heat until sugar dissolves. Add butter, stir to melt and remove from heat. Cool the mixture to room temperature and add the yeast, stir and leave for 5 minutes to start working. Then add 240 g of flour, salt, cardamom and 1 egg to the mixture. Mix well and add another 360 g of flour. Mix again and gradually add the remaining flour, kneading the dough. It should be smooth and not sticky. Roll the dough into a ball, place in a greased bowl, cover with cling film and leave in a warm place for 1 hour.
Then knead a little more and divide into 3-6 equal parts. Roll each part into a “rope” about 35-40 cm long. Take three such “ropes” and connect them together, pinching at one end, and weave a pigtail, pinching at the other end. Put the bread on a baking sheet covered with parchment and leave to rise for half an hour. Then brush with the remaining egg, beaten with 1 tbsp. l. of milk, sprinkle with sugar and bake Christmas bread in a preheated to 190 degrees oven for 20 minutes.

Shortcrust pastry pie with airy meringue and vanilla cream is the national dessert of Norwegians, which they prepare only for big holidays. Try to cook almond pie too!
You will need: for meringue – 3 egg whites, 130 g of sugar; for dough – 70 g of butter, 70 g of sugar, 3 egg yolks, 70 g of flour, 1 tbsp. l. baking powder, 1 sachet of vanilla, 3 tbsp. l. milk; for cream – 100 ml of cream (at least 33%), 1 sachet of vanilla, 50 g of powdered sugar, 50 g of almonds for sprinkling.
Preparation. For the meringue, beat the whites, add the sugar portions and beat until stiff peaks. For the dough, beat the butter with sugar, add the egg yolks one by one, beating the mixture well each time. Separately, mix the flour, baking powder and vanilla and add the mixture in small portions to the mass of yolks, pour the milk and mix thoroughly.
Spread the dough in an even thin layer on a baking sheet covered with parchment, put a layer of meringue on top, sprinkle with chopped almonds and bake the cake for 20 minutes at 175 ° C. For the cream, whip the cream with powdered sugar and vanilla into a dense mass. Cool the finished cake, cut in half. Put one part on a dish, put cream on top and cover with the second part.
