Prefabricated meat hodgepodge with sauerkraut
You will need: 3 liters of meat broth (water can be used), 250 g of sauerkraut, 400 g of any sausages, 2-3 potatoes, 1-2 pickles, 1 tomato (or 50-70 g of ketchup), olives, lemon, herbs, sour cream, salt and spices to taste.
Preparation. Collect the remains of sausage products (the more diverse they are, the richer and more interesting the taste of the hodgepodge will be), cut them into small pieces. Chop potatoes, cucumbers and tomato. Put vegetables, sausage, salt and spices into boiling broth (or water, thanks to sausages the soup will be rich anyway). Cook for 15 minutes. While the soup is cooking, put chopped olives and olives, herbs and lemon slices in plates. After the hodgepodge is poured into plates, add a spoonful of sour cream to each portion.

Sour soup will perfectly cope with hangover syndrome. Pickle cooked in meat broth will help to restore strength, warm and cheer up. Often pickle is cooked on giblets, which are rich in iron and vitamin PP, which will certainly not be superfluous in the morning of the first of January.
Brine with beef kidneys
You will need: 500 g of beef kidneys, 2-3 pickles, 1 onion, 3-4 potatoes.
Preparation. Remove the film from the buds, cut the pulp into 2-3 pieces, wash and soak for about an hour. Drain the water, bring the kidneys to a boil in fresh water and drain again. Pour the kidneys with water, bring to a boil and cook for an hour, then add chopped vegetables (one of the cucumbers can be grated on a coarse grater). Cook for 10-15 minutes, add cucumber brine at the end of cooking for a brighter taste. Salt and spices – to taste.
Fish contains many useful trace elements. Fish is also a source of lecithin, which lowers cholesterol and methionine levels, which accelerates detoxification.
Ears from the spines of red fish
You will need: 300 g of red fish spines, 85 g of rice, 1 carrot, 1 onion, 2-3 potatoes, bay leaf, spices and salt.
Preparation. Cut the spines into 2-3 pieces, boil, not forgetting to remove the foam. Add washed rice and chopped vegetables, bay leaf, spices to fish broth to taste. In 10-15 minutes the soup is ready. Take out the backbones, remove the bones from them, and return the meat to the pan.
Traditional Polish soup, during the preparation of which you can also improvise, the main thing is not to forget about the sourdough. Zhurek is a rich soup with spicy sharpness, its unusual taste will quickly restore strength.
You’ll need it: for sourdough starter (if there is no ready-made one) – 0.5 cups of rye flour, a small piece of rye bread, 2/3 cup of boiled water at 70-90 ° C, 0.5 liters of cold boiled water; for the soup – 250 g of smoked brisket, 250 g of Krakow sausage (can be replaced with another smoked sausage), 250 g of any white sausages, 250 ml of sour cream, 1 potato, 1 carrot, 2-3 small onions, garlic, bay leaf, cilantro stalks, cloves, celery, dill, marjoram, peppercorns, salt.
Preparation. Pour flour into a jar and pour hot water over it, mix thoroughly so that there are no lumps. Gradually add cold water and crumble the bread into a container. Close the jar with a loose lid (or tie it with cheesecloth) and put it in a warm place for 4-6 days until the starter starts to ferment. Stir the mixture daily. Much simplifies the preparation of soup ready-made starter, which can be found in large stores.
In a saucepan with boiling water or broth, put two sausages and “tails” of Krakow sausage, add an unpeeled onion, cloves, bay leaf, half a carrot, celery and parsley roots, salt and cook on low heat for 30 minutes. Add chopped potatoes, cook for another 15 minutes.
Finely chop the remaining sausages, onions, herbs and garlic, grate the carrots on a coarse grater.
Fry onions and carrots in a frying pan, then add sausages and stir. Add to the frying a ladle of broth and marjoram (for the first time), half of the garlic and herbs.
Remove the vegetables and cilantro from the pan. м Add the contents of the pan to the pan, let it boil and put the sliced sausages, sourdough and sour cream. Add marjoram, garlic and chopped herbs again. Stir the soup, wait a few minutes and then pour into portions. You can add half a boiled egg to the plate.
It happens that on the first of January there is no strength to cook something, but the body just asks for something tasty, warm and light. У такому разі зваріть звичайний курячий бульйон. Of course, it is better to take care of the soup for the first of January in advance. But if it so happened that the right idea came to mind too late, find the strength and stay at the stove for a while. So you will recover much faster, and in addition, you will greatly please your loved ones.
